Robuchon Purée Ratio: 2 parts potato to 1 part butter. Ingredients • 1kg Ratte/Yukon potatoes • 500g Cold butter • 250ml Hot milk • Salt 1. Boil: Cook potatoes whole/unpeeled in salted water until tender. ( i cant write next steps here sorry )
